Well for those of you who don’t know… I’m obsessed with the food network (just ask my hubby) anyway, I think my way through whole30 cooking is to channel my inner Chopped competitor and challenge myself to take what (natural and whole foods) I have in my pantry and fridge and create something filling and delicious.
So with that in mind, this mornings breakfast was born.. “a deconstructed omelet.” Sautéed spinach, shallots, mushrooms and peppers combined with scrambled eggs. The spinach with the avacado oil made it seem creamy like cheese….But there wasn’t any cheese! A win-win! I had a banana on the side to curb the sweet tooth and of course don’t forget the back coffee!
Lunch time at the Atlanta Airport rolled around today and I had packed an apple.(this goes back to the unpreparedness) anyway, huge shout out to “The Fresh Express” for having a healthy option for me (right across from Popeyes which was next to Five Guys…. Cue crazy cravings… I wanted fries so badly I almost caved..But extreme self control kicked in) anyway, I had a spinach and kale salad with cucumbers, peppers, olives, artichokes and hard boiled eggs. It was very filling and got me through to tonight’s dinner with The Kelly’s!
Lance and Hannah are about 10 days in to their Whole30 challenge and have already taught me so much! Tonight, Hannah made a recipe out of the The Whole30: The 30-Day Guide to Total Health and Food Freedom and it was delicious. It was a take on chili with lots of veggies and it is a dish I’ll be making in the future! Oh, and scrumptious roasted butternut squash. It was sweet but also satisfied the starchy type craving I had.
I know I am only two days into this journey but I have a lot of motivation and some new found pride. Pride and self esteem because I know that I can do this. I know that I am WORTHY of doing this. Taking a step back and learning to respect my body is going to lead to such a healthy and fulfilling life! I can’t wait to see what tomorrow holds <3
